When your local store gets an abundance of sweet, juicy mangoes, get a bunch and eat them until they run out. It seems like mangoes are either too stringy, or they don’t ripen well, or they just don’t taste that great. So, when there’s a good batch… We eat them until we’re sick of them! Nicholas ate his fair share of them when he was 6 months old, and all the ones we got were fantastic.
Aside from baby food, I made this yummy salsa. It’s perfect for picnics and potlucks. Spices can quickly become overpowering in a small batch, so if you multiply the servings, try adding a little crushed garlic for a different twist! Serve with sturdy romaine heart leaves or crunchy blue corn chips to scoop, or use it as a topping for any dish to add zing and flavor!
Ingredients
- - 1 1/2 cups ripe mango, diced small
- - 1/2 cup ripe pineapple, diced small
- - 2 T red onion, diced small
- - A few sprigs of cilantro, chopped
- - 1 t red and/or chili pepper, diced very small (use more or less depending on how spicy you want your salsa)
- - 1 t lime juice
- - Pinch salt
Instructions
- Gently mix all the ingredients with a spoon, and refrigerate to develop the flavors. Enjoy!
