This soup is so easy, and delicious too. Awesome for quick lunches, or lazy dinners. And what’s even better is that it’s full of flavor — I topped it with Bubbies sauerkraut one time, and couldn’t stop freaking out at how amazing it was! I like to make it during the morning nap, and blend it/reheat it just before serving. Add some toasted sourdough bread, grass-fed cheese, and some extra sauerkraut to the table, and you’ve got a stress-free dinner that also feeds your soul. In the summer, try blending in a few basil leaves for extra flavor.
{Recipe} Soul-Warming Potato & Pea Soup {Vegan, Gluten Free, Paleo}
Ingredients
- 1 tablespoon oil of choice (I like grass-fed ghee or coconut oil for this)
- 1 onion, diced small
- 3 cups frozen peas
- 3 medium potatoes, medium dice
- 1/2 teaspoon salt
- Boiling water to cover
- Optional: 1/4 cup heavy cream or coconut milk
- Optional: Sauerkraut (I highly recommend it, though!)
Instructions
- Heat the oil in a medium sized saucepan.
- Add the onions, and cook until golden. Add everything but the cream, add water to cover, and cook, covered, for about 15 minutes (or until the potatoes are tender).
- When the vegetables are fully cooked, blend the soup until smooth with the optional cream or coconut milk. Add a few basil leaves at the end, if desired.
